Quick & Easy Lunch : Tonno Tuna with Cucumbers

Easy Lunch Recipe

I'm pretty lucky that I get to work from home most of the time. This is great since it helps to save money on lunch. Our leftovers mostly get packed for my husband's lunch so I will usually make my own. Those of you who follow me on Instagram probably know that I eat a little of everything but I generally like to keep it light on the carbs and focus more on vegetables especially during the weekdays. This is one of my favorite quick and healthy lunches that I came up with on the fly one day when it was like let's just throw something together with what's in the pantry. The ingredients are key though. It really works best with good tonno tuna and persian cucumbers for texture and taste. Tonno tuna is an Italian style solid light pack tuna in pure olive oil. My favorite is this one from Cento which tastes delicious and is dolphin safe. I don't know if you can even call this a recipe since it's that easy!


Tonno Tuna with Cucumbers


1. Chop two persian cucumbers into bite size pieces and place in bowl.
2. Open a can of Tonno tuna in olive oil and pour over.
3. Drizzle lemon juice and add some fresh ground black pepper.

Et voilà! Bon Appétit!

I actually have something similar from time to time, but replace the cucumber with lettuce and a sliced hard boiled egg. It actually used to be the entree du jour my late aunt would always serve during special occasions. :o)
