Cook : Tomato and Goat Cheese Salad with Basil Dressing Recipe


While I do enjoy dining out, I actually cook at home quite often and I try to keep it healthy, quick and easy for the most part. I'm a big fan of salads for lunch and this is one that I especially love. Besides being incredibly delicious and satisfying, it literally takes just minutes to prepare. If you like insalata caprese, you will probably also enjoy this as it is a twist on that using goat cheese instead of mozzarella. The flavor is really fresh and bright which highlights the natural sweetness of tomatoes beautifully. This recipe can be easily doubled to serve two.

Tomato and Goat Cheese Salad with Basil Dressing

Ingredients:
1/3 cup fresh basil leaves
2 tablespoons olive oil
2 tablespoons white wine vinegar
Coarse or kosher salt
1 large or 2 medium tomatoes

3 ounces goat cheese
Fresh ground black pepper


Directions:
Chop the basil and blend with olive oil and white wine vinegar (this step can be done in a mini-prep).
Season to taste with salt.
Core and slice tomatoes into 1/2-inch pieces.
Cut goat cheese into slices.
Arrange tomatoes and goat cheese on plate.
Drizzle basil dressing on top, season with fresh ground black pepper and serve.

All my favourite flavours on a plate, so it's definitely a winner for me. I cook this salad in summer when the tomatoes taste like they should and could probably live on it for as long as they are available. :)
