Cook : Guacamole Salad


This is a quick, incredibly simple and delicious recipe that I make all the time. If you love avocados or guacamole, you will definitely enjoy this one. It can also easily be adapted according to your tastes. Like I tend to only use one jalapeño cause the heat makes it a little less refreshing and sometimes I add corn. You can totally omit or add ingredients as you see fit. I notice that my skin always looks great when I'm eating alot of avocados.

Guacamole Salad (from Ina Garten's Barefoot Contessa at Home)

Ingredients:
1 pt. grape tomatoes, halved
1 yellow bell pepper, seeded and 1/2" diced
1 (15 oz.) can black beans, rinsed and drained
1/2 cup red onion, diced
2 tbs. minced jalapeño pepper, seeded (2 peppers)
1/2 tsp. freshly grated lime zest
1/4 c. freshly squeezed lime juice (2 limes)
1/4 c. olive oil
1 tsp. kosher salt
1/2 tsp. freshly ground black pepper
1/2 tsp. minced garlic
1/4 tsp. ground cayenne pepper
2 ripe Hass avocados, seeded, peeled and 1/2" diced

Directions:

1. Place the tomatoes, yellow pepper, black beans, red onion, jalapeño peppers and lime zest in a large bowl.
2. Whisk together the lime juice, olive oil, salt, black pepper, garlic and cayenne pepper and pour over the vegetables.
3. Toss well.
4. Just before you're ready to serve the salad, fold the avocados into the salad.
5. Check the seasoning and serve at room temperature.

That makes me think of summer and looks delicious! Especially as in the past few days here in Scotland it's been impossible to find any fruits and vegetables, I don't understand what has happened to them... I'll keep this recipe in mind for when they appear again!
